Ingredients

  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 cups plus 2 tablespoons all-purpose flour
  • 2 1/2 cups rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon salt
  • 3/4 cup semi-sweet chocolate chips
  • 3/4 cup peanut butter chips
  • 3/4 cup toffee bits
  • flakey sea salt optional, to taste

Directions

  • Preheat the oven to 350 degrees F.
  • Line a baking sheet with parchment paper.
  • In a large bowl, cream the butter, brown sugar, and granulated sugar for 2 minutes.
  • Add the eggs and vanilla to the sugar mixture and mix to combine. Scrape down the sides of the bowl with a spatula, if needed.
  • Add the flour, oats, baking soda, cinnamon, and salt to the egg mixture and mix to combine.
  • Add the chocolate chips, peanut butter chips, and toffee bits to the batter and mix to combine.
  • Use a 1/4 measuring cup to portion the dough.
  • Use your hands to form the portions into balls.
  • Use the palm of your hand to flatten each ball into a thick disc.
  • Place the discs on the prepared baking sheets, six at a time.
  • Top the discs with sea salt.
  • Bake the cookies until the edges are set and slightly golden brown, about 9-11 minutes. The centers will still appear slightly underdone, but they will continue cooking on the baking sheet.
  • Allow the cookies to cool on the baking sheet for 5-10 minutes.
  • Transfer the cookies to a wire rack to cool completely.
  • Serve.
