Ingredients

For the chicken:

  • 1 pound chicken breast boneless and diced
  • 1 large egg
  • 3 tablespoons cornstarch
  • 2 tablespoons soy sauce
  • 2 teaspoons vegetable oil
  • sesame seeds to taste
  • green onion thinly sliced, to taste

For the sauce:

  • 3/4 cup chicken broth
  • 1 1/2 tablespoons cornstarch
  • 1/4 cup sugar
  • 3 tablespoons fresh lemon juice

Directions

  • In a bowl, combine the chicken, the egg, 3 tablespoons of the cornstarch, and the soy sauce.
  • Allow the chicken to marinate in the fridge for at least 15 minutes and up to 1 hour.
  • In a small bowl, mix the chicken broth, the remaining cornstarch, the sugar, and the lemon juice.
  • In a large skillet, heat the vegetable oil over medium-high heat.
  • Transfer the chicken from the marinade, allowing any excess to drip off.
  • Discard the marinade.
  • Add the chicken to the pan in batches and stir-fry until browned and cooked through at 165 degrees F internally, about 5 minutes.
  • Stir the sauce well to ensure the cornstarch is fully incorporated.
  • Pour the sauce mixture into the pan with the chicken and let simmer on low heat until thickened, about 3-4 minutes.
