Ingredients

  • 17 pineapple rings fresh or canned
  • 1 (3-pound) large salmon fillet
  • kosher salt to taste
  • ground black pepper to taste
  • 3 tablespoons butter melted
  • 3 tablespoons sweet chili sauce
  • 2 tablespoons cilantro freshly chopped
  • 3 cloves garlic minced
  • 2 teaspoons ginger freshly grated
  • 2 teaspoons toasted sesame oil
  • 1/2 teaspoon crushed red pepper flakes
  • toasted sesame seeds to taste
  • green onions to taste, thinly sliced
  • lime wedges to taste, for serving

Directions

  • Preheat the oven to 350 degrees F.
  • Line a large rimmed baking sheet with foil and coat it with cooking spray.
  • In the center of the foil, lay the pineapple slices in an even layer.
  • Season both sides of the salmon with the salt and the pepper.
  • Place the seasoned salmon on top of the pineapple slices.
  • In a small bowl, whisk the butter, the chili sauce, the cilantro, the garlic, the ginger, the sesame oil, and the red pepper flakes together.
  • Brush the sauce mixture all over the salmon fillet.
  • Bake until the salmon is cooked through and its temperature reads 125 degrees F internally, about 25 minutes.
  • Switch the oven to broil and broil until the fish is slightly golden, about 2 minutes.
  • Garnish with the sesame seeds and the green onions.
  • Serve the salmon with the lime wedges.
