Ingredients

For the filling:

  • 6 cups Golden Delicious apples peeled and sliced
  • 3/4 cup plus 2 tablespoons apple juice divided
  • 3/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon apple pie spice
  • 2 tablespoons cornstarch
  • 1/4 teaspoon vanilla extract

For the crust:

  • 2 1/2 cups all-purpose flour plus more for flouring a worksurface
  • 1 teaspoon salt
  • 1 cup butter cold
  • 6-8 tablespoons ice water

Directions

  • In a large saucepan, combine the apples, 3/4 cup of the apple juice, the sugar, the cinnamon, and the apple pie spice and bring the mixture to a boil over medium heat. Stir occasionally.
  • Combine the cornstarch and the remaining apple juice and add the mixture to the saucepan, stirring to combine.
  • Return the mixture to a boil, stirring constantly, and cook until thickened, about 1 minute.
  • Transfer the saucepan from the heat and stir in the vanilla.
  • Allow the mixture to cool to room temperature, stirring occasionally.
  • Preheat the oven to 400 degrees F.
  • Combine the flour and the salt in a bowl.
  • Cut the butter into the flour, mixing until it resembles crumbs.
  • Gradually add in the water, 1 tablespoon at a time, and toss with a fork until the dough can be formed into a ball.
  • Divide the dough into 2 portions, making 1 piece of dough slightly larger than the other.
  • Lightly flour a worksurface and roll out the larger dough piece.
  • Line a 9-inch pie plate with the rolled-out dough, trimming it so it is even with the edge of the plate.
  • Add the filling to the pie plate.
  • Roll out the second dough piece and place it over the filling.
  • Trim, seal, and flute the edges of the pie, and cut slits in the top of the crust to let steam escape.
  • Bake the pie until the crust is golden brown and the apples are tender, about 40-45 minutes.
  • Allow the pie to cool on a wire rack.
  • Slice and serve.
