Ingredients
For the mac and cheese:
- 10 ounces elbow macaroni
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup whole milk
- 1 (8-ounce) block Velveeta® cheese cubed
- 1/2 cup Gouda cheese shredded
- salt to taste
- black pepper to taste
For the topping:
- 1/2 cup panko breadcrumbs
- 2 tablespoons unsalted butter melted
- 1/4 cup Gouda cheese shredded
Directions
- Preheat the oven to 350 degrees F.
- Lightly coat a 9x13-inch baking dish with cooking spray.
- In a large pot of salted, boiling water, add the macaroni and cook until it is al dente, according to the package directions.
- Drain the macaroni and set it aside.
- In a large saucepan or Dutch oven over medium heat, melt 2 tablespoons of the butter.
- Add the flour to the melted butter in the saucepan and cook, while whisking, until the mixture is smooth and lightly golden, about 1-2 minutes.
- Slowly add the milk to the butter mixture while whisking.
- Cook the milk mixture, while whisking frequently, until the mixture thickens, about 3-4 minutes.
- Add the Velveeta cheese to the milk mixture and stir until it is melted.
- Add 1/2 cup of the Gouda cheese to the cheese sauce and stir until it is melted and combined.
- Taste the cheese sauce for seasoning and add the salt and the pepper, as needed.
- Add the macaroni to the cheese sauce and stir until the macaroni is well-coated.
- Transfer the macaroni mixture to the prepared baking dish.
- In a small bowl, add the panko breadcrumbs and the remaining melted butter and stir until the breadcrumbs are evenly coated.
- Add the remaining Gouda cheese to the breadcrumb mixture and toss lightly to combine.
- Sprinkle the breadcrumb mixture over the macaroni mixture in the baking dish.
- Bake until the topping is golden-brown and the cheese is bubbling, about 20-25 minutes.
- Serve hot.
