Ingredients

  • 1 1/2 pounds ground beef
  • 2 medium onions thinly sliced
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 3 medium potatoes peeled and thinly sliced
  • 1 large green pepper chopped
  • 2 ribs celery chopped
  • 1 (14.5-ounce) can stewed tomatoes
  • 1/4 teaspoon dried basil

Directions

  • In a Dutch oven over medium-high heat, add the ground beef and cook, while crumbling, until it is no longer pink, about 5-7 minutes. Drain the excess grease.
  • Add an even layer of the onions over the ground beef and sprinkle with 1/3 of the salt and 1/3 of the pepper.
  • Top the onions with an even layer of the potatoes and sprinkle with 1/2 of the remaining salt and 1/2 of the remaining pepper.
  • Top the potatoes with an even layer of the green peppers and sprinkle with the remaining salt and the remaining pepper.
  • Add the celery, the tomatoes and their juices, and the basil on top of the green pepper layer.
  • Bring the beef-and-veggie mixture to a boil.
  • Reduce the heat to medium-low. Cover and simmer the beef-and-veggie mixture until the vegetables are tender, about 1 hour.
  • Serve.
