Ingredients
- 3-4 bunches (2 1/2 pounds) flat-leaf spinach trimmed, cleaned
- 2 tablespoons butter
- 1/2 medium onion minced
- 4 cloves garlic minced
- coarse salt to taste
- ground pepper to taste
- 4 ounces cream cheese cut into pieces
- 1/2 cup milk
- ground nutmeg to taste
Directions
- In a large pot of salted, boiling water, add the spinach and cook until just wilted, about 1 minute.
- Drain the spinach in a colander and rinse it under cold water until it is cooled.
- Squeeze the spinach to remove as much of the liquid as possible.
- Coarsely chop the spinach and set it aside.
- In a large saucepan over medium heat, melt the butter.
- Add the onions, the garlic, the salt, and the pepper and cook, while stirring occasionally, until the onions soften, about 3-5 minutes.
- Add the cream cheese and the milk and cook, while stirring, until the cream cheese is melted and smooth.
- Add the spinach and stir to combine.
- Simmer the spinach mixture until thickened, about 8-10 minutes.
- Add the nutmeg and stir or toss to combine.
- Taste the spinach mixture for seasoning and add the salt and the pepper, as needed.
- Serve.
