Ingredients
- 1 large turnip peeled and chopped
- 2 medium carrots peeled and sliced
- 1 tablespoon olive oil
- 1 teaspoon lemon pepper seasoning
- 1/2 teaspoon salt
Directions
- Preheat the oven to 400 degrees F.
- Line a baking sheet with foil and spray with nonstick cooking spray.
- In a large bowl, add the turnips, the carrots, the olive oil, the lemon pepper, and the salt and toss until it is well-combined and the lemon pepper has dissolved.
- Spread the vegetable mixture onto the prepared baking sheet in an even layer.
- Roast the vegetable mixture, about 30 minutes.
- Stir the vegetable mixture, then roast again until they are soft, about 15 minutes.
- Serve.
