Ingredients

  • 1 (16-ounce) package short pasta
  • 1/4 cup red wine vinegar
  • 1/3 cup olive oil
  • 1/2 teaspoon garlic powder
  • 1 teaspoon oregano
  • salt to taste
  • pepper to taste
  • 3/4 English cucumber diced
  • 2 tomatoes sliced
  • 1/2 cup black olives pitted
  • 1/2 cup feta cheese cubed

Directions

  • In a large pot of salted, boiling water, cook the pasta to al dente, according to package instructions.
  • Drain the pasta and set it aside.
  • In a small mixing bowl, whisk together the red wine vinegar, the olive oil, the garlic powder, the oregano, the salt, and the pepper to taste.
  • In a large salad bowl, toss the pasta, the dressing, the cucumbers, the tomatoes, the black olives, and the feta cheese together.
  • Refrigerate and serve cold.
