Ingredients

  • 6 ounces chicken stuffing mix plus the ingredients called for on the box
  • 1 tablespoon butter
  • 6 chicken breasts boneless and skinless, optionally cubed
  • 1/2 teaspoon black pepper
  • 1/2 pound fresh green beans trimmed and cut into 1-inch lengths
  • 1/4 cup all-purpose flour
  • 1 3/4 cups chicken broth
  • 5 ounces cream cheese cubed

Directions

  • Preheat the oven to 400 degrees F.
  • Spray a 9x13-inch baking dish with cooking spray.
  • Prepare the stuffing mix according to the package directions.
  • In a large skillet, melt the butter over medium heat.
  • Add the chicken to the melted butter and sprinkle it with the pepper.
  • Cook until the chicken is almost cooked through at 140 degrees F, about 3-4 minutes per side if using whole breasts and about 3-4 minutes total if using cubed chicken. The chicken will finish cooking in the oven.
  • Place the chicken in the prepared baking dish.
  • In the same skillet, cook and stir the beans until crisp-tender, about 6 minutes.
  • Sprinkle the beans with the flour and cook until the raw flour smell disappears, about 1 minute.
  • Stir in the broth and let simmer, stirring frequently, about 3 minutes.
  • Add the cream cheese and stir until melted.
  • Spoon the green beans and the sauce over the chicken.
  • Top the green beans and chicken with the stuffing.
  • Bake until heated through and the chicken has reached 165 degrees F internally, about 30 minutes.
  • Serve.
