Ingredients
- 6 ounces chicken stuffing mix plus the ingredients called for on the box
- 1 tablespoon butter
- 6 chicken breasts boneless and skinless, optionally cubed
- 1/2 teaspoon black pepper
- 1/2 pound fresh green beans trimmed and cut into 1-inch lengths
- 1/4 cup all-purpose flour
- 1 3/4 cups chicken broth
- 5 ounces cream cheese cubed
Directions
- Preheat the oven to 400 degrees F.
- Spray a 9x13-inch baking dish with cooking spray.
- Prepare the stuffing mix according to the package directions.
- In a large skillet, melt the butter over medium heat.
- Add the chicken to the melted butter and sprinkle it with the pepper.
- Cook until the chicken is almost cooked through at 140 degrees F, about 3-4 minutes per side if using whole breasts and about 3-4 minutes total if using cubed chicken. The chicken will finish cooking in the oven.
- Place the chicken in the prepared baking dish.
- In the same skillet, cook and stir the beans until crisp-tender, about 6 minutes.
- Sprinkle the beans with the flour and cook until the raw flour smell disappears, about 1 minute.
- Stir in the broth and let simmer, stirring frequently, about 3 minutes.
- Add the cream cheese and stir until melted.
- Spoon the green beans and the sauce over the chicken.
- Top the green beans and chicken with the stuffing.
- Bake until heated through and the chicken has reached 165 degrees F internally, about 30 minutes.
- Serve.
