Ingredients
For the salad:
- 1 small head cabbage diced
- 3 small cucumbers diced
- 4 medium green onions sliced
- 3 cups kale finely chopped
- 2 cups quinoa cooked
- lemons optional, to taste, sliced, for garnish
For the dressing:
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 2 cloves garlic
- 1 small shallot
- 1/2 cup fresh basil
- 1/2 cup fresh parsley
- 1/2 cup fresh dill
- 1 cup spinach
- 1/3 cup pumpkin seeds optional
- 1 teaspoon salt
Directions
- In a large salad bowl, add the cabbage, the cucumbers, the green onions, the kale, and the quinoa, and toss to combine.
- In a blender, add the lemon juice, the olive oil, the red wine vinegar, the garlic, the shallot, the basil, the parsley, the dill, the spinach, the pumpkin seeds, and the salt and blend until smooth.
