Ingredients
- 1 tablespoon brown sugar packed
- 1 tablespoon paprika
- 1 tablespoon chili powder
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 4 pounds beef short ribs bone-in, trimmed of fat
- 8 ice cubes
- 1/2 cup barbecue sauce plus more, to taste, for serving
Directions
- In a medium mixing bowl, combine the sugar, the paprika, the chili powder, the salt, and the garlic powder.
- Place the short ribs on a baking dish and rub all sides generously with the spice mixture.
- Cover the ribs and refrigerate for 30 minutes-1 hour.
- Preheat the grill to medium indirect heat.
- Place a 1/4 of the ribs and two of the ice cubes in the center of a heavy-duty aluminum foil sheet.
- Double-fold the foil ends to seal the packet, leaving enough room for heat to circulate on the inside.
- Repeat the process until you have 4 total packets.
- Place the packets on the grill rack over medium indirect heat.
- Cover and grill until the ribs are perfectly tender, and reach 200-205 degrees F when checked with a thermometer, about 1 1/2-2 hours.
- Make a slit across the top of the packets with a knife, being careful as there will be a lot of steam. Once the steam has escaped, open the foil packets and remove the meat.
- Brush the ribs with the 1/2 cup of the barbecue sauce and grill over direct medium heat until browned, about 5 minutes.
- Serve hot with the extra barbecue sauce.
