Ingredients

  • 2 (10.5-ounce) cans cream of mushroom soup
  • 1/2 cup milk
  • salt to taste
  • black pepper to taste
  • 5 small potatoes peeled and sliced very thinly
  • 2 pounds ground beef cooked and drained
  • 1 1/2 cups cheddar cheese or Colby-Jack shredded

Directions

  • Preheat the oven to 350 degrees F.
  • Coat a 9x13-inch baking dish with nonstick spray.
  • In a mixing bowl, add the cream of mushroom soup, the milk, the salt, and the black pepper and whisk well to combine.
  • In the prepared baking dish, layer 1/2 of the potato slices, 1/2 of the cooked beef, 1/2 of the soup mixture, and 1/2 of the cheese, in that order.
  • Repeat the layers once.
  • Cover the baking dish with foil.
  • Bake for 1 hour.
  • Uncover the baking dish and bake until the potatoes are fork-tender, about 30 minutes.
  • Allow the casserole to rest for 5-10 minutes.
  • Slice and serve.
