Ingredients
- 2 medium russet potatoes
- 4 tablespoons unsalted butter divided
- 2 yellow onions sliced
- 16 large eggs
- 1/2 cup half-and-half
- 1 teaspoon kosher salt plus more, to taste
- black pepper to taste
- 1 (1-pound) ham steak trimmed and cubed
- 2 cups sharp white cheddar cheese shredded
- 1/2 cup fresh chives chopped, divided
- 1 cup sour cream
Directions
- Preheat the oven to 350 degrees F.
- Using a fork, prick the potatoes all over.
- In a microwave-safe bowl, add the potatoes and microwave them, carefully turning them once halfway through, until they are almost tender, about 7-8 minutes.
- Allow the potatoes to cool.
- In a large, nonstick, ovenproof skillet over medium-low heat, melt 2 tablespoons of the butter.
- Add the onions to the melted butter and cook, while stirring occasionally, until they are a deep golden-brown and caramelized, about 20 minutes.
- Peel and cube the cooled microwaved potatoes.
- In a large bowl, add the eggs, the half-and-half, 1 teaspoon of the salt, and the black pepper and whisk to combine.
- Add the remaining butter to the caramelized onions and increase the heat to medium-high.
- Add the potatoes and the ham to the caramelized onions and cook, while tossing occasionally, about 2-3 minutes.
- Reduce the heat to medium.
- Add the egg mixture to the caramelized onion mixture and cook until it is just set around the edges, about 2 minutes.
- Sprinkle the top of the egg mixture evenly with the cheese and 1/2 of the chives.
- Transfer the skillet to the oven and bake until the top is a light golden and a knife inserted into the center comes out clean, about 15-17 minutes.
- Allow the ham'ttata to cool in the skillet for 5 minutes.
- In a small bowl, add the sour cream, the remaining chives, the extra salt, and the black pepper and stir to combine.
- Serve the ham'ttata with the chive-sour cream.
