Ingredients
For the cheese filling:
- 6 ounces cream cheese softened
- 2 teaspoons milk
- 1 egg yolk
- 1 teaspoon vanilla
- 3 tablespoons granulated sugar
For the apple filling:
- 3/4 pound Granny Smith apples peeled and diced
- 1/4 cup granulated sugar
- 1 tablespoon water
- 2 teaspoons cinnamon
- 2 teaspoons vanilla
- 1/2 cup caramel bits such as Kraft® Caramel Bits
- 1/4 teaspoon sea salt
- 1 1/2 ounces pecans chopped
For the crust:
- flour to taste, for dusting the work surface
- 1 egg
- 1 tablespoon water
- 1 (17.3-ounce 2-count) package puff pastry
Directions
- In a small bowl, add the cream cheese, the milk, the egg yolk, 1 teaspoon of the vanilla, and 3 tablespoons of the granulated sugar and using an electric handheld mixer, beat until smooth and combined.
- Set the cream cheese mixture aside.
- In a medium saucepan, add the apples, the remaining granulated sugar, 1 tablespoon of the water, the cinnamon, and the remaining vanilla and stir to combine.
- Place the saucepan over medium heat and cook the apple mixture, while stirring often, until the apples have softened, about 5 minutes.
- Add the caramel bits and the salt to the apple mixture and stir to combine.
- Reduce the heat to low and cook the apple mixture, while stirring frequently, until the caramel has melted.
- Add the pecans to the apple mixture and stir to combine.
- Transfer the apple mixture from the heat and set it aside.
- Preheat the oven to 400 degrees F.
- Line two large baking sheets with parchment paper.
- Dust a work surface with the flour.
- In a small bowl, add the egg and the remaining water and whisk to combine.
- Unroll 1 sheet of the puff pastry on the floured work surface and using a rolling pin, roll it into a 12x12-inch square.
- Cut the puff pastry square into 4 equally-sized squares.
- Repeat the rolling and cutting process with the remaining puff pastry sheet.
- Divide the cream cheese mixture evenly between the puff pastry squares, placing each portion in the center of each square.
- Top the cream cheese mixture on each puff pastry square with an even amount of the apple mixture.
- Fold each piece of the puff pastry in half, sealing the edges to keep the filling inside.
- Brush the tops the turnovers evenly with the egg wash.
- Transfer the turnovers to the prepared baking sheets.
- Bake the turnovers until they are puffed and golden-brown, about 14-16 minutes.
- Allow the turnovers to cool.
- Serve.
