Ingredients

For the berry salad:

  • 2 cups quinoa cooked
  • 1 heaping cup blackberries
  • 1 heaping cup blueberries optional
  • 1 heaping cup raspberries
  • 1 cup baby spinach
  • 1/2 cup fresh basil optional, chopped
  • 1/2 cup gorgonzola cheese crumbled
  • 1/2 cup sunflower seeds

For the dressing:

  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • salt to taste

Directions

  • In a large serving bowl, add the quinoa, the blackberries, the blueberries, the raspberries, the baby spinach, the basil, the cheese, and the sunflower seeds and toss to combine.
  • In a glass measuring cup, add the oil, the lemon juice, the honey, and the salt and whisk to combine.
  • Evenly drizzle the dressing over the salad and toss to combine.
  • Serve.
