Ingredients

  • 2 tablespoons butter
  • 4 (15.25-ounce) cans sliced peaches drained
  • 1 3/4 cups sugar divided
  • 3 teaspoons vanilla extract divided
  • 1 teaspoon crystallized ginger finely chopped
  • 1/2 teaspoon ground cinnamon
  • 1 cup shortening
  • 1/4 cup brown sugar packed
  • 1 large egg room temperature
  • 1 teaspoon almond extract
  • 2 1/2 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • pecans optional, to taste, chopped
  • coarse sugar optional, to taste
  • vanilla ice cream optional, to taste, for serving

Directions

  • Preheat the oven to 350 degrees F.
  • In a 12-inch cast-iron or other ovenproof skillet over medium heat, melt the butter.
  • Add the peaches, 3/4 cup of the sugar, 2 teaspoons of the vanilla, the ginger, and the cinnamon.
  • Cook and stir the peaches until they soften and begin to break down, about 10 minutes.
  • Transfer the skillet from the heat.
  • In a large bowl, cream the shortening, the brown sugar, and the remaining sugar until light and fluffy, about 5-7 minutes.
  • Beat in the egg, the almond extract, and the remaining vanilla.
  • In another bowl, whisk together the flour, the cornstarch, the baking soda, and the baking powder.
  • Gradually add the dry ingredients mixture to the cream mixture until a dough forms.
  • Crumble the dough over the peaches in the skillet.
  • Sprinkle the top with the pecans and the coarse sugar.
  • Bake until a toothpick inserted into the center comes out clean, about 35-40 minutes.
  • Cool on a wire rack and serve with the ice cream.
