Ingredients
- 2 tablespoons butter
- 4 (15.25-ounce) cans sliced peaches drained
- 1 3/4 cups sugar divided
- 3 teaspoons vanilla extract divided
- 1 teaspoon crystallized ginger finely chopped
- 1/2 teaspoon ground cinnamon
- 1 cup shortening
- 1/4 cup brown sugar packed
- 1 large egg room temperature
- 1 teaspoon almond extract
- 2 1/2 cups all-purpose flour
- 1 tablespoon cornstarch
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- pecans optional, to taste, chopped
- coarse sugar optional, to taste
- vanilla ice cream optional, to taste, for serving
Directions
- Preheat the oven to 350 degrees F.
- In a 12-inch cast-iron or other ovenproof skillet over medium heat, melt the butter.
- Add the peaches, 3/4 cup of the sugar, 2 teaspoons of the vanilla, the ginger, and the cinnamon.
- Cook and stir the peaches until they soften and begin to break down, about 10 minutes.
- Transfer the skillet from the heat.
- In a large bowl, cream the shortening, the brown sugar, and the remaining sugar until light and fluffy, about 5-7 minutes.
- Beat in the egg, the almond extract, and the remaining vanilla.
- In another bowl, whisk together the flour, the cornstarch, the baking soda, and the baking powder.
- Gradually add the dry ingredients mixture to the cream mixture until a dough forms.
- Crumble the dough over the peaches in the skillet.
- Sprinkle the top with the pecans and the coarse sugar.
- Bake until a toothpick inserted into the center comes out clean, about 35-40 minutes.
- Cool on a wire rack and serve with the ice cream.
