Ingredients

  • 1 cup water
  • 6 tablespoons butter
  • 2 tablespoons granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon kosher salt
  • 2 large eggs
  • vegetable oil for frying
  • cinnamon sugar

Directions

  • Combine the butter, water, and sugar in a saucepan over medium heat.
  • Once boiling, add the vanilla.
  • Cut the heat, then add the flour and salt.
  • Stir until the mixture begins to thicken, then allow to cool for up to 8-10 minutes.
  • Beat the eggs into the cooled mixture one at a time using a hand mixer.
  • Using a rubber spatula, transfer the mix into a piping bag with a star tip.
  • Add enough oil to a large pot, over medium heat, to where it comes halfway up the sides.
  • Ensure the oil temperature stays at 375 degrees F.
  • Carefully pipe 5-inch long churros into the hot oil. Use kitchen scissors to cut each churro off as you pipe the dough into the oil.
  • 3-4 churros can be added to the oil at a time, allowing enough space so they don't stick to one another.
  • Fry them for 4-5 minutes until golden brown.
  • Between each batch, ensure the frying oil is back to 375 degrees F to avoid burning.
  • Remove the churros with a slotted spoon and immediately roll them in cinnamon sugar.
  • Place the churros onto a wire rack to allow them to cool.
  • Serve once cooled.
