Ingredients

  • 2 pounds apricots ripe but not firm and quartered
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons cornstarch
  • 1 1/2 teaspoons cinnamon divided
  • 3/4 cup all-purpose flour
  • 1/3 cup brown sugar packed
  • 1/2 teaspoon kosher salt
  • 1 cup old-fashioned rolled oats
  • 1/2 cup unsalted butter cold and cut into slices
  • vanilla ice cream to taste, for serving

Directions

  • Preheat the oven to 350 degrees F.
  • Grease a small casserole dish.
  • In a large bowl, add the apricot pieces, the granulated sugar, the cornstarch, and 1 teaspoon of the cinnamon and toss to coat.
  • Pour the apricot mixture into the prepared casserole dish.
  • In a second large bowl, add the flour, the brown sugar, the salt, and the oats and whisk to combine.
  • Cut the butter into the flour mixture until it is coarse and crumbly.
  • Sprinkle the crumble mixture over the apricot mixture.
  • Bake the apricot crumble until the juices are bubbling and the topping is golden-brown, about 35-40 minutes.
  • Serve the apricot crumble with the ice cream.
