Ingredients
- 2 pounds apricots ripe but not firm and quartered
- 1/4 cup granulated sugar
- 1 1/2 teaspoons cornstarch
- 1 1/2 teaspoons cinnamon divided
- 3/4 cup all-purpose flour
- 1/3 cup brown sugar packed
- 1/2 teaspoon kosher salt
- 1 cup old-fashioned rolled oats
- 1/2 cup unsalted butter cold and cut into slices
- vanilla ice cream to taste, for serving
Directions
- Preheat the oven to 350 degrees F.
- Grease a small casserole dish.
- In a large bowl, add the apricot pieces, the granulated sugar, the cornstarch, and 1 teaspoon of the cinnamon and toss to coat.
- Pour the apricot mixture into the prepared casserole dish.
- In a second large bowl, add the flour, the brown sugar, the salt, and the oats and whisk to combine.
- Cut the butter into the flour mixture until it is coarse and crumbly.
- Sprinkle the crumble mixture over the apricot mixture.
- Bake the apricot crumble until the juices are bubbling and the topping is golden-brown, about 35-40 minutes.
- Serve the apricot crumble with the ice cream.
