Ingredients

  • 2 tablespoons oil
  • 6 chicken thighs bone-in and skin-on
  • salt to taste
  • pepper to taste
  • 1 teaspoon paprika plus more, to taste
  • 8 ounces ground chorizo
  • 1 onion diced
  • 1 red bell pepper sliced
  • 4 cloves garlic sliced
  • 1 (14-ounce) can diced tomatoes
  • 1/2 cup green olives
  • 1 (15.5-ounce) can chickpeas drained
  • 1/4 cup golden raisins
  • 10 sprigs fresh thyme

Directions

  • Preheat the oven to 400 degrees F.
  • In an oven-safe skillet over medium high heat, add the oil.
  • Evenly season the chicken thighs all over with the salt, the pepper, and the extra paprika.
  • Add the seasoned chicken thighs to the hot oil and fry until they are golden-brown all over, about 6-7 minutes per side. Transfer to a clean plate.
  • In the same skillet, add the chorizo and cook, while crumbling, until it is no longer pink, about 5-7 minutes.
  • Add the onions, the red bell peppers, and the garlic to the ground chorizo and cook, stirring occasionally, until the veggies have softened, about 3-5 minutes.
  • Add the diced tomatoes and their juices, the olives, the chickpeas, the raisins, the thyme, the remaining 1 teaspoon of the paprika, the salt, and the pepper to the chorizo mixture and stir until it is well-combined. Cook, about 5 minutes.
  • Nestle the cooked chicken thighs skin-side up into the chorizo mixture.
  • Transfer the skillet to the oven and bake the chicken mixture until the chicken thighs reach an internal temperature between 185-190 degrees F, about 1 hour.
  • Serve immediately.
