Ingredients
- 2 large eggs lightly beaten
- 1 cup pizza sauce divided
- 1 cup seasoned breadcrumbs
- 1 medium onion chopped
- 1 medium green pepper chopped
- 1 teaspoon dried oregano plus more, to taste, for garnish
- 1 clove garlic minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 pounds lean ground beef
- 1 pound bulk Italian sausage
- 1/2 pound deli ham sliced
- 2 cups part-skim mozzarella cheese shredded, divided
- 1 (6-ounce) jar sliced mushrooms drained
Directions
- Preheat the oven to 375 degrees F.
- Grease a 13x9-inch baking dish.
- In a large bowl, combine the eggs, 3/4 cup of the pizza sauce, the breadcrumbs, the onion, the green pepper, 1 teaspoon of the oregano, the garlic, the salt, and the pepper.
- Crumble the beef and the sausage over the sauce mixture, mixing well to combine.
- On a piece of parchment paper, pat the beef mixture into a 12x10-inch rectangle.
- Layer the layered beef mixture with the ham, 1 1/2 cups of the cheese, and the mushrooms, leaving a 1-inch border around the edges.
- Roll the beef rectangle up, jelly-roll style, starting with a short side and peeling the parchment paper away as you roll.
- Seal the seam and the ends of the beef roll.
- Place the beef roll, seam-side down, in the prepared baking dish.
- Brush the meatloaf with the remaining pizza sauce.
- Bake the meatloaf, uncovered, for 1 hour.
- Sprinkle the meatloaf with the remaining cheese.
- Bake the meatloaf until it reaches an internal temperature of 160 degrees F and no pink remains, about 15-20 minutes.
- Carefully use two large spatulas to transfer the meatloaf to a serving platter.
- Serve the meatloaf garnished with the extra oregano.
