Ingredients
- 1/2 cup butter divided
- 6 tablespoons all-purpose flour
- 3 cups half-and-half
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
- 1 1/2 cups soda crackers crumbled and divided
- 6 eggs hard-boiled and chopped
- 3 cups sharp cheddar cheese grated
- 1 cup pimento drained and chopped
Directions
- Preheat the oven to 325 degrees F.
- Grease a 1 1/2-quart casserole dish.
- In a saucepan, melt 6 tablespoons of the butter over moderately-low heat.
- Add the flour and whisk until the mixture is a smooth paste.
- Add the half-and-half, the salt, and the pepper, continuing to whisk until the sauce thickens.
- Remove the saucepan from the heat.
- Spoon 1/2 cup of the sauce into the prepared casserole dish.
- Sprinkle 1/2 of the cracker crumbs over the sauce.
- Arrange the eggs, the cheese, and the pimentos in layers in the prepared casserole dish, repeating until all the ingredients have been used.
- Top the casserole with the remaining cracker crumbs.
