Ingredients

  • 1/2 cup butter divided
  • 6 tablespoons all-purpose flour
  • 3 cups half-and-half
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 1 1/2 cups soda crackers crumbled and divided
  • 6 eggs hard-boiled and chopped
  • 3 cups sharp cheddar cheese grated
  • 1 cup pimento drained and chopped

Directions

  • Preheat the oven to 325 degrees F.
  • Grease a 1 1/2-quart casserole dish.
  • In a saucepan, melt 6 tablespoons of the butter over moderately-low heat.
  • Add the flour and whisk until the mixture is a smooth paste.
  • Add the half-and-half, the salt, and the pepper, continuing to whisk until the sauce thickens.
  • Remove the saucepan from the heat.
  • Spoon 1/2 cup of the sauce into the prepared casserole dish.
  • Sprinkle 1/2 of the cracker crumbs over the sauce.
  • Arrange the eggs, the cheese, and the pimentos in layers in the prepared casserole dish, repeating until all the ingredients have been used.
  • Top the casserole with the remaining cracker crumbs.
  • Dot the top of the casserole with the remaining butter.
  • Bake until the casserole is bubbling and golden, about 30 minutes.
