Heart-healthy quinoa and chickpeas take the main stage of this dish. And they're simply mixed with fresh peppers, onions, tomatoes and sweet raisins to create a savory, fluffy, delicious blend. See? Luda-Couscous is not ridiculous... no, more like amazing!

Ingredients
- 1 1/2 cups water
- 1/2 cup orange juice
- 1 (15-ounce) can chickpeas or garbanzo beans rinsed and drained
- 2 medium tomatoes seeded and chopped
- 1 medium sweet red pepper julienned
- 1 cup quinoa rinsed
- 1 small red onion finely chopped
- 1/2 cup raisins
- 1 teaspoon curry powder
- 1/2 cup fresh cilantro minced
Directions
- In a large saucepan, bring the water and the orange juice to a boil.
- Stir the chickpeas, the tomatoes, the red pepper, the quinoa, the onion, the raisins, and the curry into the mixture and return to a boil.
- Lower the heat, cover, and simmer the quinoa mixture until the liquid is absorbed, about 15-20 minutes.
- Transfer the saucepan from the heat and fluff with a fork.
- Sprinkle the couscous with the cilantro.
- Serve.
