Ingredients

For the chicken:

  • 3 egg yolks
  • 2 cloves garlic minced
  • 2 chicken breasts boneless and skinless, halved
  • 6 tablespoons butter
  • 1 cup panko breadcrumbs
  • 1 cup parmesan cheese grated
  • 1 tablespoon dried parsley
  • 1 tablespoon garlic powder
  • 1/2 tablespoon salt
  • ground black pepper to taste
  • 4 slices black forest ham deli ham
  • 4 slices Swiss cheese

For the honey mustard sauce:

  • 3 tablespoons mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 teaspoon yellow mustard
  • 1 teaspoon honey
  • fresh parsley optional, to taste, torn, for garnish

Directions

  • In a small bowl, add the egg yolks and the garlic and whisk to combine.
  • In a large resealable plastic bag, add the chicken halves and the egg mixture and squeeze out all the air.
  • Seal the bag tightly and massage the bag to coat the chicken halves completely.
  • Refrigerate the bag and allow the chicken halves to marinate for at least 4 hours and up to overnight.
  • Preheat the oven to 400 degrees F.
  • In a small skillet over medium-low heat, melt the butter.
  • In a 9x13-inch baking dish, add the melted butter and swirl it around to evenly coat the bottom.
  • In a bowl, add the breadcrumbs, the parmesan cheese, the dried parsley, the garlic powder, the salt, and the black pepper and stir to combine.
  • Dip the marinated chicken in the breadcrumb mixture, making sure to coat the chicken entirely.
  • Place the coated chicken in the prepared baking dish and pour any of the remaining egg yolk marinade over the top.
  • Bake until the chicken is cooked and reaches an internal temperature of 165 degrees F, about 15-18 minutes.
  • Top each piece of the chicken with 1 slice of the ham and 1 slice of the Swiss cheese.
  • Bake until the cheese is melted, about 5 minutes.
  • In a small bowl, add the mayonnaise, the Dijon mustard, the yellow mustard, and the honey and whisk to combine.
  • Serve the chicken with the honey mustard sauce and garnish with the fresh parsley.
