Ingredients

  • 3 large eggs room temperature
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract optional
  • 1 1/3 cups all-purpose flour sifted
  • 1 pound fresh strawberries hulled, halved or quartered, divided
  • whipped cream optional, to taste, for serving

Directions

  • Preheat the oven to 400 degrees F.
  • Grease a 9-inch round cake pan or pie plate.
  • In a bowl, add the eggs, the sugar, and the vanilla and using an electric hand-mixer on medium speed, beat until pale in color, about 3 minutes.
  • Add the flour to the egg mixture and using a rubber spatula, gently fold until just combined and a smooth batter forms.
  • Add almost all of the strawberries to the batter, reserving a few for topping, and fold to combine.
  • Spoon the batter into the prepared baking pan.
  • Top the batter with the reserved strawberries.
  • Bake the cake for 5 minutes.
  • Reduce the oven temperature to 350 degrees F.
  • Continue to bake the cake until golden on top and a toothpick inserted into the center comes out clean, about 30-35 minutes.
  • Allow the cake to cool until it is just warm.
  • Serve with the whipped cream.
