Ingredients
- 1 1/3 cups plus 1/2 cup reduced-sodium chicken broth divided
- 2/3 cup quinoa rinsed
- 1 tablespoon canola oil
- 1 medium sweet potato diced
- 1 medium onion chopped
- 1 celery rib chopped
- 1 cup frozen peas
- 2 cloves garlic minced
- 1 teaspoon fresh gingerroot minced
- 3 teaspoons curry powder
- 1/4 teaspoon salt
- 2 cups chicken cooked and shredded
Directions
- In a medium saucepan, add 1 1/3 cups of the chicken broth and bring it to a boil.
- Add the quinoa to the chicken broth.
- Reduce the heat to low and simmer, covered, until the liquid is absorbed, about 12-15 minutes.
- In a large skillet over medium-high heat, add the canola oil.
- Add the sweet potatoes, the onion, and the celery to the heated canola oil and sauté until the sweet potatoes are tender, about 10-12 minutes.
- Add the frozen peas, the garlic, the gingerroot, the curry powder, and the salt to the sweet potato mixture and cook, stirring, until tender, about 2 minutes.
- Add the chicken and the remaining chicken broth to the sweet potato mixture, stirring to combine, and cooking until heated through.
- Add the cooked quinoa to the sweet potato mixture, stirring to combine, and cook just until heated through, about 1 minute.
- Plate and serve.
