Ingredients

  • 1 3/4 cups graham cracker crumbs
  • 1/3 cup butter melted
  • 1 1/4 cups sugar divided
  • 3 (8 ounce) packages cream cheese softened
  • 1 cup sour cream
  • 2 teaspoons vanilla
  • 3 eggs
  • 1 (21 ounce) can cherry pie filling

Directions

  • Preheat the oven to 350 degrees F.
  • Add the graham cracker crumbs, butter, and 1/4 cup of the sugar together in a mixing bowl, combining until a sandy mixture forms.
  • Press the crust mixture into the bottom of a 9-inch springform pan.
  • Beat in the cream cheese and the remaining 1 cup of the sugar into a large mixing bowl using a hand mixer until it is completely blended.
  • Add in the sour cream and vanilla, mixing well.
  • Add in the eggs one at a time, beating them at a low speed after every egg is added until just mixed.
  • Pour the custard over the crust.
  • Bake until the center of the cheesecake is barely set, about 1 hours-1hr 10 minutes.
  • Run a knife around the rim of the pan to loosen the cake and allow it to cool before removing the rim of the springform.
  • Refrigerate the cheesecake for about 4 hours to completely set it.
  • Garnish the cheesecake with the cherry pie filling before serving.
