Ingredients
- 1 3/4 cups graham cracker crumbs
- 1/3 cup butter melted
- 1 1/4 cups sugar divided
- 3 (8 ounce) packages cream cheese softened
- 1 cup sour cream
- 2 teaspoons vanilla
- 3 eggs
- 1 (21 ounce) can cherry pie filling
Directions
- Preheat the oven to 350 degrees F.
- Add the graham cracker crumbs, butter, and 1/4 cup of the sugar together in a mixing bowl, combining until a sandy mixture forms.
- Press the crust mixture into the bottom of a 9-inch springform pan.
- Beat in the cream cheese and the remaining 1 cup of the sugar into a large mixing bowl using a hand mixer until it is completely blended.
- Add in the sour cream and vanilla, mixing well.
- Add in the eggs one at a time, beating them at a low speed after every egg is added until just mixed.
- Pour the custard over the crust.
- Bake until the center of the cheesecake is barely set, about 1 hours-1hr 10 minutes.
- Run a knife around the rim of the pan to loosen the cake and allow it to cool before removing the rim of the springform.
- Refrigerate the cheesecake for about 4 hours to completely set it.
- Garnish the cheesecake with the cherry pie filling before serving.
