Ingredients

  • 2 large onions chopped
  • 6 tablespoons olive oil
  • 3 cloves garlic minced
  • 3 pounds plum tomatoes seeded and chopped
  • 1 cup vegetable or chicken broth
  • 1 tablespoon dried basil
  • 1 teaspoon crushed red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (16-ounce) package penne pasta
  • 1 (24-ounce) block Havarti cheese cut into 1/2-inch cubes
  • 1 cup Greek olives pitted
  • 1/3 cup parmesan cheese grated

Directions

  • Grease a 9x13-inch baking dish.
  • In a Dutch oven over medium-high heat, sauté the onions in the oil until tender.
  • Add the garlic to the onions and cook until fragrant, about 1 minute.
  • Stir the tomatoes, the broth, the basil, the pepper flakes, the salt, and the pepper into the onions and bring to a boil.
  • Reduce the heat and simmer, covered, until the sauce slightly thickens, about 25-30 minutes.
  • Preheat the oven to 375 degrees F.
  • In a separate pot, cook the penne to al dente, according to the package instructions and drain.
  • Stir the Havarti cheese, the olives, and the cooked penne into the sauce.
  • Add the pasta mixture to the prepared baking dish.
  • Sprinkle the pasta with the parmesan cheese.
  • Cover and bake the pasta for 20 minutes.
  • Uncover and bake until the cheese is melted, about 5 minutes.
  • Serve.
