Ingredients
- 1 pound Italian sausage ground or links with casings removed
- 3 large carrots peeled and diced
- 1 onion finely diced
- 1 rib celery finely chopped
- 1 1/2 teaspoons Italian seasoning
- 1 teaspoon garlic minced
- 1 teaspoon salt
- 3 cups low-sodium chicken broth
- 1 (28-ounce) can diced tomatoes
- 1 cup tomato sauce
- 3 cups refrigerated cheese tortellini
Directions
- In a large soup pot over medium-high heat, add the sausage and cook, while crumbling, until it is no longer pink, about 5-8 minutes.
- Drain the excess grease from the pot.
- Add the carrots, the onions, and the celery to the pot and cook, while stirring, until the onions have softened, about 3-5 minutes.
- Add the Italian seasoning, the garlic, and the salt and cook, while stirring, until the garlic is fragrant, about 1 minute.
- Add the broth, the tomatoes and their juices, and the tomato sauce and stir to combine.
- Bring the soup mixture to a simmer.
- Reduce the heat to medium and cover the pot.
- Simmer the soup until the carrots are almost tender, about 15 minutes.
- Add the tortellini and stir to combine.
- Cover the pot and simmer until the tortellini is cooked through and the carrots are tender, about 5-6 minutes.
- Serve.
