Ingredients

  • 1 pound ground spicy Italian sausage
  • 1/2 cup yellow onion diced
  • 4 cups chicken broth
  • 2 (14.5 ounce) cans diced tomatoes with Italian herbs
  • 1/4 teaspoon pepper
  • fresh parsley optional, to taste, chopped
  • 6 ounces lasagna noodles broken into 1-2-inch pieces
  • 1/2 cup parmesan cheese grated
  • 1 1/2 cups whole milk ricotta cheese

Directions

  • In a 5 quart Dutch oven, cook the Italian sausage and the onions over medium heat, stirring occasionally, until the onions are tender and the sausage is brown, about 8 to 10 minutes.
  • Drain the sausage mixture.
  • Stir in the chicken broth, the peppers, the diced tomatoes and their juices, the parsley, and the lasagna noodles.
  • Bring the soup to a boil.
  • Reduce the heat, cover, and let it simmer for 10 minutes, stirring occasionally, until the lasagna noodles are tender.
  • Top with the parmesan, the ricotta cheese, and more of the parsley.
  • Serve warm!
