Ingredients
- 1 pound ground spicy Italian sausage
- 1/2 cup yellow onion diced
- 4 cups chicken broth
- 2 (14.5 ounce) cans diced tomatoes with Italian herbs
- 1/4 teaspoon pepper
- fresh parsley optional, to taste, chopped
- 6 ounces lasagna noodles broken into 1-2-inch pieces
- 1/2 cup parmesan cheese grated
- 1 1/2 cups whole milk ricotta cheese
Directions
- In a 5 quart Dutch oven, cook the Italian sausage and the onions over medium heat, stirring occasionally, until the onions are tender and the sausage is brown, about 8 to 10 minutes.
- Drain the sausage mixture.
- Stir in the chicken broth, the peppers, the diced tomatoes and their juices, the parsley, and the lasagna noodles.
- Bring the soup to a boil.
- Reduce the heat, cover, and let it simmer for 10 minutes, stirring occasionally, until the lasagna noodles are tender.
- Top with the parmesan, the ricotta cheese, and more of the parsley.
- Serve warm!
