Ingredients

For the chicken:

  • 4 chicken breasts boneless and skinless
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • 1 cup chicken broth
  • 1 1/2 tablespoons fresh lime juice
  • 1/4 cup onion finely chopped
  • 1 tablespoon cilantro chopped
  • 1/2 teaspoon red pepper flakes
  • 3 tablespoons heavy cream
  • 2 tablespoons unsalted butter cubed

Optional, for serving:

  • lime wedges to taste
  • cilantro to taste, chopped
  • asparagus to taste, cooked and hot

Directions

  • Preheat the oven to 375 degrees F.
  • Pound the chicken breasts to an even thickness.
  • Season the chicken breasts evenly with the salt and the pepper.
  • In a large, ovenproof skillet over medium-high heat, add the oil.
  • Add the chicken breasts to the hot oil and cook, turning them once, until browned but not cooked through, about 6-7 minutes.
  • Transfer the chicken to a plate and tent them with foil.
  • Transfer the skillet from the heat.
  • Add the broth, the lime juice, the onions, 1 tablespoon of the cilantro, and the red pepper to the skillet and stir to combine.
  • Place the skillet over medium-high heat and cook, while scraping the bottom to release the browned bits, until the broth mixture starts to boil.
  • Gently boil the chicken broth mixture, uncovered, until the liquid reduces to about 1/4 cup, about 10 minutes.
  • Reduce the heat to medium-low.
  • Add the heavy cream and the butter to the broth mixture and stir until the butter has melted and the broth mixture thickens.
  • Nestle the chicken breasts into the sauce.
  • Bake, uncovered, until the chicken breasts reach an internal temperature of 165 degrees F.
  • Spoon the sauce over the chicken.
  • Serve with the lime wedges, the extra cilantro, and the asparagus.
