Ingredients
For the chicken:
- 4 chicken breasts boneless and skinless
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon olive oil
- 1 cup chicken broth
- 1 1/2 tablespoons fresh lime juice
- 1/4 cup onion finely chopped
- 1 tablespoon cilantro chopped
- 1/2 teaspoon red pepper flakes
- 3 tablespoons heavy cream
- 2 tablespoons unsalted butter cubed
Optional, for serving:
- lime wedges to taste
- cilantro to taste, chopped
- asparagus to taste, cooked and hot
Directions
- Preheat the oven to 375 degrees F.
- Pound the chicken breasts to an even thickness.
- Season the chicken breasts evenly with the salt and the pepper.
- In a large, ovenproof skillet over medium-high heat, add the oil.
- Add the chicken breasts to the hot oil and cook, turning them once, until browned but not cooked through, about 6-7 minutes.
- Transfer the chicken to a plate and tent them with foil.
- Transfer the skillet from the heat.
- Add the broth, the lime juice, the onions, 1 tablespoon of the cilantro, and the red pepper to the skillet and stir to combine.
- Place the skillet over medium-high heat and cook, while scraping the bottom to release the browned bits, until the broth mixture starts to boil.
- Gently boil the chicken broth mixture, uncovered, until the liquid reduces to about 1/4 cup, about 10 minutes.
- Reduce the heat to medium-low.
- Add the heavy cream and the butter to the broth mixture and stir until the butter has melted and the broth mixture thickens.
- Nestle the chicken breasts into the sauce.
- Bake, uncovered, until the chicken breasts reach an internal temperature of 165 degrees F.
- Spoon the sauce over the chicken.
- Serve with the lime wedges, the extra cilantro, and the asparagus.
