Ingredients
- 1/2 cup shortening
- 1/2 cup butter
- 1 (1-pound) box light brown sugar
- 2 eggs well beaten
- 2 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 cup pecans finely chopped
Directions
- Preheat the oven to 350 degrees F.
- Grease a cookie sheet.
- In the bowl of a stand mixer, cream the shortening and the butter thoroughly on medium speed.
- Gradually add the light brown sugar, creaming well after each addition.
- Add the well-beaten eggs.
- Sift the flour, salt, and baking soda into a bowl, stirring them to combine.
- Reduce the speed of the mixer to medium-low.
- Add the flour mixture to the batter.
- Add the vanilla to the batter.
- Stir the chopped pecans into the batter.
- Using a teaspoon, drop the dough onto the prepared cookie sheet about 2 inches apart from each other. Grease and use another baking sheet if needed.
- Bake until just set, about 10 minutes.
- Allow the cookies to cool.
- Serve.
