Ingredients
- 1/4 cup butter cubed
- 2 cups peaches fresh or frozen, thawed, drained, thinly sliced
- 4 large eggs
- 1 1/4 cups fat-free milk
- 1/2 teaspoon almond extract
- 1 1/4 cups all-purpose flour
- 1/2 cup sugar
- 3/4 teaspoon salt
- peach preserves to taste, warm
- maple syrup to taste
Directions
- Preheat the oven to 425 degrees F.
- In a 9x13-inch baking dish, add the cubed butter. Transfer the dish to the oven until the butter has melted, about 3-4 minutes, then transfer from the oven and carefully swirl to coat the bottom and the sides of the baking dish.
- Carefully add the peaches to the melted butter and transfer back into the oven until they are bubbly, about 3-4 minutes.
- In a large bowl, add the eggs and whisk until frothy.
- Add the milk and the almond extract to the egg mixture and whisk to combine.
- Add the flour, the sugar, and the salt to the egg mixture and whisk to combine.
- Add the batter to the top of the hot peach mixture and bake until it has puffed and the sides are golden-brown, about 10-12 minutes.
- Plate, topping the Dutch pancake with the warm peach preserves and the maple syrup, and serve.
