What are two foods that almost every single person likes? Without a doubt, it's pizza and potatoes. Both of these guys are so versatile, so delicious, and so comforting. Well, someone (us) had the brilliant idea to put them together, so get ready, because you're about to go nuts for this delicious duo. Pizza Potatoes make sure you get your warm and tender baked potato and all your beloved pizza toppings. Think, melty cheese, tender veggies, tangy tomato sauce, and of course, spicy pepperoni all piled on top. You can really make it your own and that ensures everyone is happy. That's the name of Pizza Potatoes' games... they're just there to bring a smile to everyone that's around the table!
Ingredients
- 4 large baking potatoes, washed, patted dry, and pierced all over with a sharp knife
- 1 1/2 tablespoons olive oil, divided
- salt, to taste
- pepper, to taste
- 1 medium onion, chopped
- 1 cup mushrooms, sliced
- 1/2 cup pepperoni rounds, sliced
- 1 (8-ounce) can tomato sauce
- 1/2 teaspoon Italian seasoning
- 1 cup mozzarella, shredded
Directions
Step 1 -Preheat the oven to 425 degrees F.
Step 2 -Line a baking sheet with parchment paper.
Step 3 -Rub the potatoes with 1/2 tablespoon of the oil and sprinkle with the salt and the pepper.
Step 4 -Place the coated potatoes on a paper towel and microwave until they are just tender, turning them halfway through, about 10 minutes.
Step 5 -Carefully transfer the potatoes to the prepared baking sheet.
Step 6 -Bake until the skins are crisp, about 15 minutes.
Step 7 -While the potatoes are baking, in a large skillet over medium-high heat, heat the remaining oil.
Step 8 -Cook the onion and the mushrooms in the oil, stirring occasionally, until they are soft and beginning to brown, about 5 minutes.
Step 9 -Stir the pepperoni, the tomato sauce, the Italian seasoning, the salt, and the pepper into the onion mixture.
Step 10 -Carefully transfer the baked potatoes from the oven.
Step 11 -Place the oven rack 5 inches from the heat source.
Step 12 -Preheat the broiler.
Step 13 -Carefully cut a slit in the top of each potato and gently pull to open.
Step 14 -Fluff the inside of the potatoes with a fork.
Step 15 -Evenly divide the pepperoni mixture and the cheese among the potatoes.
Step 16 -Broil until the cheese has melted and starts to brown, about 2 minutes.
Step 17 -Serve immediately.
