Ingredients

  • 2 tablespoons butter divided
  • 1/2 pound smoked Polish sausage or smoked kielbasa cut into 1/2-inch slices
  • 1/2 large head cabbage coarsely chopped
  • 1 medium onion chopped
  • 2 (8-ounce) cans tomato sauce
  • 1/4 cup sugar
  • 1 tablespoon paprika
  • 2 large potatoes peeled and cubed

Directions

  • In a large enameled cast-iron or other oven-proof skillet, melt 1 tablespoon of the butter.
  • Add the sausage and cook until browned, about 5 minutes.
  • Transfer the sausage to a plate.
  • Melt the remaining butter in the same skillet.
  • Add the cabbage and the onion and sauté until tender, about 5-7 minutes.
  • In a small bowl, combine the tomato sauce, the sugar, and the paprika.
  • Pour the sauce mixture over the cabbage mixture.
  • Bring the mixture to a boil, then reduce the heat to low.
  • Cover and simmer the mixture for 20 minutes.
  • Add the potatoes and the sausage, then cover again to simmer until the potatoes are tender, about 30 minutes.
  • Serve.
