Ingredients
- 8 ounces penne pasta uncooked
- 2 tablespoons vegetable oil
- 1/2 pound portobello mushrooms thinly sliced
- 1/2 cup margarine
- 1/4 cup all-purpose flour
- 1 large clove garlic minced
- 1/2 teaspoon dried basil
- 2 cups milk
- 2 cups mozzarella cheese shredded, divided
- 1 (10-ounce) package frozen chopped spinach thawed
- 1/4 cup soy sauce
Directions
- Preheat the oven to 350 degrees F.
- Lightly grease a 9x13-inch baking dish.
- Bring a large pot of lightly salted water to a boil.
- Cook the penne to al dente, according to package directions. Drain the pasta.
- Heat the oil in a saucepan over medium heat.
- Stir the mushrooms into the oil and cook for 1 minute.
- Transfer the mushrooms to a plate.
- Melt the margarine in the same saucepan.
- Mix the flour, the garlic, and the basil into the melted margarine until lightly golden and fragrant, about 1-2 minutes.
- Gradually mix the milk into the flour mixture until thickened.
- Stir 1 cup of the cheese into the sauce mixture until melted.
- Transfer the saucepan from heat and mix in the cooked pasta, the mushrooms, the spinach, and the soy sauce.
- Transfer the mixture to the prepared baking dish and top with the remaining cheese.
- Bake the casserole until bubbly and lightly brown, about 20 minutes.
- Serve.
