Ingredients
For the crust:
- baking spray with flour to taste, for greasing the pan
- 3 cups all-purpose flour
- 1 cup unsalted butter cold and cubed
- 3/4 cup powdered sugar
- 1 teaspoon kosher salt
For the filling:
- 4 large eggs
- 1 cup light corn syrup
- 2/3 cup light brown sugar packed
- 1/2 cup honey
- 1/4 cup all-purpose flour
- 1/4 cup unsalted butter melted
- 1 teaspoon ground cinnamon
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground ginger
- 3 cups pecans coarsely chopped
Directions
- Preheat the oven to 350 degrees F.
- Coat a 9x13-inch baking pan with the baking spray with flour.
- Line the bottom and the sides of the prepared baking pan with parchment paper, with a 2-3-inch overhang on two sides.
- In a food processor, add 3 cups of the flour, 1 cup of the cold butter, 3/4 cup of the powdered sugar, and 1 teaspoon of the salt and cover the processor.
- Pulse the flour mixture until coarse crumbs forms, about 6-7 times.
- Firmly press the crumb mixture into the bottom of the prepared pan.
- Bake the crumb crust until it is lightly golden-brown, about 20 minutes. Don't worry if the crust has cracks in it.
- In a bowl, add the eggs, the corn syrup, the brown sugar, the honey, the remaining flour, the remaining melted butter, the cinnamon, the remaining salt, and the ginger and whisk until smooth.
- Add the pecans to the egg mixture and stir to combine.
- Pour the egg mixture over the warm crust.
- Bake until the filling is set, about 25-30 minutes.
- Allow the bars to cool completely in the pan, about 1 hour.
- Slice and serve.
