Ingredients
- 1 tablespoon olive oil
- 4 large eggs lightly beaten
- 1/4 cup half and half
- kosher salt to taste
- freshly ground black pepper to taste
- 8 mini croissants halved horizontally
- 4 ounces ham thinly sliced
- 4 slices cheddar cheese halved
Directions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the eggs to the skillet and cook, whisking, until they just begin to set, about 4-5 minutes.
- Gently whisk in the half and half.
- Season with salt and pepper, to taste.
- Continue cooking until thickened and no visible liquid egg remains, about 3-5 minutes.
- Set the eggs aside.
- Fill the croissants with the eggs, ham and cheese to make 8 sandwiches.
- Wrap the sandwiches tightly in plastic wrap and place them in the freezer.
- To reheat the sandwiches, remove the plastic wrap from the frozen sandwich and wrap in a paper towel.
- Place the sandwich into the microwave until heated through completely, about 1-2 minutes.
- Serve immediately.
