- 1 pound large elbow pasta uncooked
- 1/2 cup unsalted butter divided
- 1 1/2 cups sweet onion finely chopped
- 1/4 cup all-purpose flour
- 3 1/2 cups whole milk
- 2 teaspoons Dijon mustard
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 8 ounces extra-sharp cheddar cheese shredded
- 8 ounces Colby Jack cheese shredded
- 2 1/2 cups smoked pork shredded
- 1 cup panko
- 1/4 cup sliced scallions for serving

Directions
- Preheat the oven to 350 degrees F.
- Coat a 13x9-inch baking dish with cooking spray, and then place it on a baking sheet lined with aluminum foil.
- In a large pot of salted, boiling water, cook the pasta to al dente according to the package directions. Drain.
- Melt 6 tablespoons of the butter in a large saucepan over medium.
- Add the onion to the butter and cook, stirring often, until it is tender, about 5 minutes.

- Microwave the remaining butter in a small microwavable bowl on high heat until it has melted, about 30 seconds.
- In a small bowl, stir the panko into the melted butter until it is combined.
