Ingredients

  • 1 pound red potatoes
  • 1/2 medium onion chopped into chunks
  • 2 cloves garlic minced
  • 3 tablespoons olive oil
  • 1 tablespoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 3-4 eggs
  • 1/2 cup cheddar cheese shredded
  • parsley chives, and other fresh herbs, optional, to taste, for topping

Directions

  • Preheat the oven to 400 degrees F.
  • Cut the potatoes in half lengthwise and then in half again lengthwise.
  • Dice the potato quarters into 1/2-inch pieces.
  • Add the potatoes and the onion to a sheet pan.
  • Add the garlic, olive oil, paprika, salt, and pepper flakes.
  • Toss everything together until the potatoes and onions are coated.
  • Bake for 10 minutes.
  • Stir and flip the potatoes.
  • Bake until the potatoes are tender, about 10-15 minutes.
  • Transfer the sheet pan from the oven.
  • Create a well in the center of the sheet pan.
  • Crack the eggs in the middle.
  • Sprinkle the cheese over the eggs and potatoes.
  • Bake until the egg whites have set and the egg yolks reach the desired firmness, about 7-12 minutes.
  • Transfer the sheet pan from the oven.
  • Sprinkle the herbs on top.
