Ingredients
- 1 pound red potatoes
- 1/2 medium onion chopped into chunks
- 2 cloves garlic minced
- 3 tablespoons olive oil
- 1 tablespoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon red pepper flakes
- 3-4 eggs
- 1/2 cup cheddar cheese shredded
- parsley chives, and other fresh herbs, optional, to taste, for topping
Directions
- Preheat the oven to 400 degrees F.
- Cut the potatoes in half lengthwise and then in half again lengthwise.
- Dice the potato quarters into 1/2-inch pieces.
- Add the potatoes and the onion to a sheet pan.
- Add the garlic, olive oil, paprika, salt, and pepper flakes.
- Toss everything together until the potatoes and onions are coated.
- Bake for 10 minutes.
- Stir and flip the potatoes.
- Bake until the potatoes are tender, about 10-15 minutes.
- Transfer the sheet pan from the oven.
- Create a well in the center of the sheet pan.
- Crack the eggs in the middle.
- Sprinkle the cheese over the eggs and potatoes.
- Bake until the egg whites have set and the egg yolks reach the desired firmness, about 7-12 minutes.
- Transfer the sheet pan from the oven.
- Sprinkle the herbs on top.
