Ingredients

  • 1 1/2 cups rice cooked
  • 2 cups milk divided
  • 1/4 teaspoon salt
  • 2/3 cup golden raisins optional
  • 1 egg beaten
  • 1/3 cup white sugar
  • 1 tablespoon butter
  • 1/2 teaspoon vanilla extract
  • cinnamon optional, to taste, for sprinkling on top

Directions

  • In a saucepan over medium heat, stir the cooked rice, 1 1/2 cups of the milk, and the salt together. C
  • Continue to stir and cook until the contents become creamy and thickened, about 15-20 minutes.
  • Stir in remaining milk, raisins, beaten egg, and sugar.
  • Continue to stir and cook until the egg has set, 2-3 minutes.
  • Remove the saucepan from the heat.
  • Stir the butter and vanilla into the pudding.
  • Serve in bowls and sprinkle the cinnamon on top.
