Ingredients
- 1 1/2 cups rice cooked
- 2 cups milk divided
- 1/4 teaspoon salt
- 2/3 cup golden raisins optional
- 1 egg beaten
- 1/3 cup white sugar
- 1 tablespoon butter
- 1/2 teaspoon vanilla extract
- cinnamon optional, to taste, for sprinkling on top
Directions
- In a saucepan over medium heat, stir the cooked rice, 1 1/2 cups of the milk, and the salt together. C
- Continue to stir and cook until the contents become creamy and thickened, about 15-20 minutes.
- Stir in remaining milk, raisins, beaten egg, and sugar.
- Continue to stir and cook until the egg has set, 2-3 minutes.
- Remove the saucepan from the heat.
- Stir the butter and vanilla into the pudding.
- Serve in bowls and sprinkle the cinnamon on top.
