Ingredients
- 1 red bell pepper
- 1 (15-ounce) can chickpeas drained and rinsed
- 3 tablespoons lemon juice
- 3 tablespoons tahini
- 2 cloves garlic
- 1/2 teaspoon salt
- 1/4 teaspoon cumin
- 2 tablespoons olive oil
- 1 tablespoon water optional
- red pepper flakes optional, to taste, for serving
- pita chips optional, to taste, for serving
Directions
- Set an oven rack two levels, at least 4 inches, below the broiler.
- Preheat the broiler.
- Line a baking tray with foil.
- Core and seed the bell pepper.
- Slice the bell pepper into quarters lengthwise.
- Place the peppers on the prepared baking sheet.
- Broil the peppers on the prepared oven rack until charred, about 10-15 min.
- Remove the peppers from the oven, and place them in a gallon-size resealable bag.
- Let them rest for about 10 minutes.
- Peel the charred skin off the bell peppers, and let them cool completely.
- Dice the pepper quarters into 1 1/2-inch pieces.
- In a food processor, add the chickpeas, the lemon juice, the tahini, the garlic, the salt, and the cumin.
- Pulse the chickpea mixture for 2 minutes, scraping down the sides and bottom.
- Add the olive oil and the chopped peppers.
- Pulse for 1 minute.
- Add the water to thin the hummus mixture and pulse for 1 minute.
- Top with the red pepper flakes.
- Serve with the pita chips.
