Ingredients
- 2 pounds small red potatoes washed
- water to taste
- 2/3 cup mayonnaise
- 1/4 cup buttermilk
- 2 tablespoons cider vinegar
- 1 clove garlic minced
- 1/2 cup celery chopped
- 2 scallions chopped
- 1 teaspoon sugar
- salt to taste
- black pepper to taste
- 6 slices bacon cooked and crumbled, for topping
Directions
- In a large saucepan, add the potatoes and enough of the water to cover them by about 1 inch.
- Bring the water to a boil and cook the potatoes until they are fork-tender, about 15-20 minutes.
- Drain the potatoes and allow them to cool.
- In a large mixing bowl, add the potatoes, the mayonnaise, the buttermilk, the cider vinegar, the garlic, the celery, the scallions, and the sugar gently stir to combine.
- Season the potato salad with the salt and the black pepper and stir gently until well-combined.
- Top with the bacon crumbles and serve.
