Ingredients

For the chicken pasta:

  • 1 pound chicken breasts boneless and skinless, cut into bite-sized pieces
  • 2 tablespoons taco seasoning
  • 1/2 onion diced
  • 1 red bell pepper diced
  • 2 teaspoons garlic minced
  • 1 (10-ounce) can tomatoes with green chilies
  • 2 cups chicken broth
  • 1 (16-ounce) box penne cooked
  • 2 cups cheddar cheese shredded

Optional toppings:

  • tomatoes to taste, chopped
  • sour cream to taste
  • cilantro leaves to taste

Directions

  • In a slow cooker, add the chicken pieces, the taco seasoning, the onions, the bell peppers, the garlic, the tomatoes with green chiles plus their juices, and the chicken broth and stir to combine.
  • Cover the slow cooker and cook the chicken mixture on low heat until the meat is tender, about 6 hours.
  • Stir the cooked penne and the cheese into the chicken mixture.
  • Serve the penne mixture topped with the tomatoes, the sour cream, and the cilantro.
