Ingredients
- 2 tablespoons oil
- 1 medium onion chopped
- 2 cloves garlic minced
- coarse salt to taste
- pepper to taste
- 1 1/2 teaspoons dried thyme or oregano
- 1 (28-ounce) can whole tomatoes
- 1 (28-ounce) can crushed tomatoes
- 1 (32-ounce) package refrigerated cheese ravioli
- 1 1/2 cups mozzarella cheese shredded
- 1/2 cup parmesan cheese grated
Directions
- Preheat the oven to 425 degrees F.
- Heat the oil in a large saucepan over medium-high heat.
- Add the onions, the garlic, the salt, and the pepper.
- Cook, stirring frequently, until the onions are softened, about 5 minutes.
- Add the thyme, the whole tomatoes and their juices, and the crushed tomatoes and their juices.
- Bring the sauce mixture to a boil.
- Reduce the heat and allow the sauce mixture to simmer, breaking up the whole tomatoes with a spoon.
- Reduce the sauce to about 5 cups, about 20-25 minutes.
- Cook the ravioli in a pot of boiling water just until they float, about 3-5 minutes. Drain the ravioli.
- Toss the sauce and the raviolis together in a casserole dish.
- Top the ravioli swith the mozzarella and the parmesan cheese.
- Bake for 20-25 minutes.
- Serve hot!
