Ingredients
- 4 pork chops center cut
- salt to taste
- pepper to taste
- 3 tablespoon extra-virgin olive oil
- 1 (14-ounce) can jellied cranberry sauce
- 1 tablespoon orange peel dried and grated
- 1 tablespoon balsamic vinegar
- 3 tablespoons water
Directions
- Preheat the oven to 375 degrees F.
- Bring the pork chops to room temperature, pat them dry, and season with the salt and pepper on both sides.
- In a large, heavy skillet over medium-high heat, heat the oil.
- In a bowl, combine the cranberry sauce and the orange peel and stir until well-blended.
- Set aside 1/2 of the cranberry mixture for the pork chops and store the rest in the refrigerator for another use.
- Add the balsamic vinegar to the cranberry mixture and stir until blended.
- Arrange the pork chops in the hot skillet and sear just until browned on one side, about 2 minutes.
- Flip the pork chops over and sear the other side, about 2 minutes. The pork chops will not be cooked through at this point.
- Transfer the seared pork chops to an 8x8-inch baking dish.
- Add the water to the bottom of the pan.
- Generously spread the cranberry mixture over the top of the pork chops.
- Place the baking dish on the middle oven rack and bake for 10 minutes.
- Switch the oven to broil and broil the pork chops until the cranberry glaze is caramelized, about 1 minute. Be sure to watch closely to prevent them from burning.
- Let the pork chops rest for 5 minutes.
- Serve.
