Ingredients

  • 3 tablespoons olive oil
  • 3 green bell peppers stems and seeds removed, chopped into large chunks
  • salt to taste
  • pepper to taste
  • 1 pound hot Italian sausage
  • 1/3 cup red wine

Directions

  • Preheat the oven to 350 degrees F.
  • In an oven-safe skillet, heat the olive oil.
  • Add the green peppers to the hot olive oil and sauté until they begin to soften, about 3-4 minutes.
  • Season the bell peppers with the salt and the pepper.
  • Transfer the green bell peppers to a plate.
  • In the same skillet, add the sausage and cook until it is browned, about 3-4 minutes per side.
  • Add the red wine to the sausage.
  • Cover the skillet with foil and bake for 40 minutes.
  • Uncover the baking dish and add the cooked green peppers.
  • Bake until the sausage is cooked through and the green peppers are very soft, about 30 minutes.
  • Serve.
