Ingredients

  • 1 tablespoon olive oil
  • 6 cloves garlic minced
  • 1 cup heavy cream
  • 1/3 cup chicken broth
  • 6–8 chicken thighs bone-in and skins removed
  • 1 tablespoon Italian seasoning
  • 1 teaspoon crushed red chili pepper flakes optional
  • sea salt to taste
  • fresh cracked black pepper to taste
  • 1/2 cup sun-dried tomatoes chopped
  • 3/4 cup parmesan cheese grated
  • 2 cups spinach chopped, packed

Directions

  • Heat the oil in a medium saucepan over medium heat.
  • Add the garlic and sauté until fragrant, about 1 minute.
  • Add the cream and the chicken broth.
  • Set the heat to low and bring the sauce mixture to a simmer until the sauce thickens, about 10 minutes.
  • Place the chicken thighs at the bottom of your slow cooker.
  • Season the chicken thighs with the Italian seasoning, the crushed red chili pepper flakes, the sea salt, and the black pepper.
  • Top the seasoned chicken thighs with the sun-dried tomatoes.
  • When the sauce is thickened, lower the heat and whisk in the parmesan cheese, a little at a time, until smooth.
  • Pour the sauce over the chicken thighs in the slow cooker.
  • Cover the slow cooker and cook for 3-4 hours on high or 6-8 hours on low.
  • When the cooking time is over, gently remove the chicken from the slow cooker and set it aside.
  • Turn the slow cooker on high.
  • Add the chopped spinach to the slow cooker and stir until the spinach wilts, about 3 minutes.
  • Return the chicken to the slow cooker, and spoon the liquid, the spinach, and the sun-dried tomatoes on top.
