Ingredients
For the fries:
- 1 (26-ounce) bag frozen crispy french fries
- 1/2 pound ground beef
- kosher salt to taste
- black pepper to taste
- 2 tablespoons butter plus more, to taste
- 2 tablespoons all-purpose flour
- 1 cup milk
- 2 1/2 cups white cheddar freshly grated
For the toppings:
- 1 cup mayonnaise
- 2 tablespoons ketchup
- 2 tablespoons dill relish
- 2 tablespoons onion freshly grated
- 1 teaspoon honey
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon smoked paprika
- pickles to taste, whole or diced
- jalapeños to taste, thinly sliced
Directions
- Preheat the oven to 450 degrees F.
- On a baking sheet, add the fries and spread them out evenly.
- Bake the fries, flipping them once, until crispy and heated through, about 20-25 minutes.
- Season the ground beef with the salt and the black pepper.
- In a cast-iron skillet over medium heat, melt the extra butter.
- Break the ground beef into 6 even portions.
- Add the beef portions to the melted butter and use the bottom of a glass or jar to carefully smash them down into the skillet to form thin patties.
- Cook the patties, flipping them once, until browned, about 1-2 minutes per side.
- In a saucepan over medium heat, melt 2 tablespoons of the remaining butter.
- Add the flour to the melted butter and cook, while whisking, until the flour is golden, about 2-3 minutes.
- While whisking, slowly stream the milk into the flour mixture and cook, while continuing to whisk and stir, until it thickens into a sauce, about 5 minutes.
- Reduce the heat to low.
- Add the white cheddar to the sauce, 1 handful at a time, and stir to combine until melted.
- Add the salt and the black pepper to the sauce and stir to combine.
- Drizzle the fries with about 1/2 of the sauce mixture.
- Top the fries with the patties, breaking them up, as desired.
- Drizzle the fries and the patties with the remaining sauce.
- Bake the burger-fries until everything is warmed through, about 5-10 minutes.
- In a bowl, add the mayonnaise, the ketchup, the dill relish, the onions, the honey, the vinegar, and the paprika and whisk to combine.
- Serve the burger-fries topped with the Thousand Island dressing, the pickles, and the jalapeños.
