Ingredients
- 1/4 cup vegetable oil
- 16 cups fresh okra trimmed, sliced or chopped
- 2 cups onion chopped
- 1 cup green bell pepper chopped
- 1 cup celery chopped
- 6 bulbs garlic cloves peeled and pressed
- 2 (14.5-ounce) can diced tomatoes can substitute 4 cups fresh tomatoes, chopped
- 1 tablespoon salt
- 1/2 teaspoon cayenne pepper
Directions
- In a large, heavy pot over medium-low heat, add the oil.
- Add the okra slices to the heated oil and cook, stirring occasionally, until they are no longer slimy, about 1 hour.
- Add the onions, the bell peppers, the celery, the pressed garlic, and the tomatoes to the okra and cook until the veggie mixture is soft, about 20 minutes.
- Season the okra mixture with the salt and the cayenne pepper and stir to combine.
- Serve.
